Food Spotlight... the tomato

On Valentine's Day I did a post about the health benefits of lycopene, so I felt it was only appropriate that this week's food spotlight was tomatoes. Tomatoes are in season from July to September, but are available year round. Tomatoes are a member of the nightshade family which includes potatoes, eggplants, and tobacco. Tomatoes come in a variety of shapes and sizes, each with its own distinct flavor. Tomatoes are extremely nutrient dense, and as such have numerous health benefits including colon, prostrate, and pancreatic health, improved cholesterol, reduced risk of &#9829 disease, and anti-inflammatory effects.
