Shining a Spotlight on Pancakes

I love pancakes, and have since I was a child. Who doesn't love them? Which is one reason they are the food spotlight for this week... But there is another more exciting reason I chose to have pancakes as the food spotlight of the week (more on this in a later post)!

Pancakes. Panqueques. Crepes. Blintzes. Flapjacks. Whatever you call them, they are delicious (for breakfast, lunch, or dinner). Pancakes are flat cakes that are cooked on a hot griddle. Unfortunately, most pancakes tend to be highly caloric and not particularly nutrient dense. Here are some ideas to lighten up/add some nutrients to your flapjacks: use eggwhites to decrease the calories and fat content, add blueberries for an antioxidant punch, try whole-wheat flour and reduce your risk of metabolic syndrome, drop in some oatmeal for some extra fiber, or add some flax seed for a dose of healthy fats. Try your pancakes topped with a drizzle of honey and almonds for some antioxidants and protein, or simply top with fruit and enjoy some phytochemicals.
