T Minus 7 Days... Mashed Potatoes!

We have one week left until the big day, and today we are going to talk potatoes... Mashed potatoes are a must have at Thanksgiving and can be an extremely versatile side dish. Typical mashed potatoes are made with butter and cream and are typically loaded with calories and fat. There are so many other yummy things to indulge in I would rather not waste hundreds of calories on potatoes. To lighten up your mashed potatoes, try replacing the cream with skim milk, low-fat sour cream, butter milk or chicken broth. Try replacing the butter with smart balance (gotta love the omega-3s), a touch of olive oil, or simply omitting it altogether. I also love adding roasted garlic or shallots.
