I adore sweet potatoes! My Grandmother makes them every year just for me (usually dripping in syrup and marshmallows). If you want to indulge in the delicious tuber without really indulging well then look no further.
Although we typically think of sweet potatoes as a Thanksgiving food, their health benefits beg for them to be consumed year-round! Sweet potatoes are full of vitamin A, vitamin C, iron, fiber, potassium and vitamin B6. They also are full of antioxidants and studies have shown that they have an anti-inflammatory effect. Personally, I like my sweet potatoes simple. Baked and drizzled with a touch of honey and sprinkled with slivered almonds, nothing could be more delicious. Sweet potatoes are extremely nutritious as well!
