In a previous post I promised to provide recipes utilizing some of the delicious fruits and veggies that are in season during autumn. Well, first up is acorn squash. Acorn squash is in the same family as zucchini and yellow squash and is a good source of fiber, potassium, and beta-carotene. It can be extremely versatile in cooking as it lends itself to sweet or savory dishes, which is the primary reason it is my favorite fall veggie.
